【摘要】 驴乳与人乳成分相似,并具有低过敏性,是理想的代乳品。驴乳含有丰富的乳铁蛋白、溶菌酶、乳过氧化物酶和免疫球蛋白等活性因子,具有抗氧化、抗肿瘤、抗菌及增强免疫力的作用,是新兴的功能乳品。驴乳的抗氧化特性有益于人体的氧化防御,其作为天然的抗氧化乳品成为功能性食品的研究热点。本文主要综述了驴乳的基本成分组成、抗氧化功能及作用机制,以期为驴乳的开发利用提供理论参考。更多还原

【Abstract】 The ingredients of donkey milk that is hypoallergenic are similar with human milk,and the donkey milk is an ideal cow milk substitute.Donkey milk is rich in active factors such as lactoferrin,lysozyme,lactoperoxidase and immunoglobulin,that milk is an emerging functional dairy product with antioxidant,anti-tumor,antibacterial and immunity.The antioxidant function of donkey milk is beneficial to establish the oxidative defense for human body.Donkey milk,as a natural antioxidant dairy product,has become a research hotspot of functional food.This review summarized the basic compositions,antioxidant function and mechanism of donkey milk to provide theoretical reference for the development and utilization of donkey milk.更多还原
