维西百花蜜理化指标及挥发性成分分析

【摘要】 国内外关于单花蜜的研究报道很多,但未见有关维西中蜂百花蜜的研究报道。本研究以维西两种不同风味的中蜂百花蜜为研究对象,参照国家相关标准的方法测定理化指标,采用固相微萃取-气相色谱-质谱联用法对其挥发性成分的种类和含量进行分析。结果表明:维西百花蜜样的10个理化指标检测值均符合我国蜂蜜标准GB 18796-2005的要求;通过对2个蜜样的离子图谱进行检索分析,共确定81种化合物,其中醇类16种,烃类16种,酸类15种,酮类12种,脂类10种,醛类3种,酚类3种,以及其他类化合物6种。含量较高的香味成分主要有苯乙酸、3,5,5-三甲基-环己烯酮、2,6,6-三甲基-2-环已烯-1,4-二酮、壬酸、乙酸乙酯等化合物,苯甲酸、肉桂醇和辛酸等物质又可运用在医药之上,并发现异辛酸在维西百花蜜中为主要挥发性成分。本研究旨在为维西中蜂百花蜂蜜的质量和营养价值评价以及为百花蜂蜜的研究提供一定的科学依据。
【Abstract】 In spite of lots of research about monofloral honry at home and abroad,and no studies have reported on multifloral honey of apis cerana in Weixi.The reports on multifloral honey are seldom.The study assessed multifloral honey of Apis cerana grown in Weixi and determinated the physical and chemical indicators base on interrelated national standards.Afterward,the volatile components of this honey were analyzed with solid phase microextraction coupled with gas chromatography-mass spectrometry(SPME-GC-MS).The results showed that the ten physical and chemical indicators of multifloral honey of Apis cerana grown in Weixi consistented with national standards(GB 18796-2005).We identified 81 chemical compounds by searching and analyzing the Ion spectrum from multifloral honey of Apis cerana grown in Weixi.Including alcohols(16 kinds),hydrocarbons(16 kinds),acids(15 kinds),ketones(12 kinds),lipids(10 kinds),aldehyde(3 kinds),phenols(3 kinds),and other 6 kinds of compounds.Higher content of aroma components mainly include benzeneacetic aci;2-Cyclohexen-1-one,3,5,5-trimethyl;2,6,6-Trimethyl-2-cycloh-exene-1,4-dione;nonanoic acid;ethyl acetate and so on.Benzaldehyde;2-Propen-1-ol,3-phenyl-;octanoic acid and other substances can be used in the bitterness of medicine.And found that the main volatile components was 2-ethylhexanoic acid in the multifloral honey of Apis cerana cerana grown in Weixi.This paper is aimed to evaluate the quality and nutritional value of multifloral honey of Apis cerana grown in Weixi,and provide some scientific basis for further studies on multifloral flowers honey.
