处理方式对西藏光核桃功能性营养成分及其抗氧化能力的影响

【摘要】 以西藏光核桃为研究对象,系统地研究超声、压差闪蒸和蒸汽热烫3种处理方式对西藏光核桃功能性营养成分含量及其抗氧化能力的影响,分别测定不同处理方式条件下西藏光核桃多酚、黄酮、多糖、水溶性果胶的含量,并采用1,1-二苯基-2-三硝基苯肼(1,1-diphenyl-2-picrylhydrazyl,DPPH)自由基清除能力、2,2’-联氮-二(3-乙基-苯并噻唑-6-磺酸)二铵盐(2,2’-azinobis-(3-ethylbenzothiazoline-6-sulphonate),ABTS)自由基清除能力和铁离子还原能力(ferric ion reducing antioxidant power,FRAP)3种方法,从不同角度分析西藏光核桃功能性营养物质的抗氧化能力,运用线性拟合分析方法揭示功能性营养物质含量与抗氧化能力之间的关系。试验结果表明,与对照组相比,超声处理显著降低多酚、黄酮、多糖含量及其抗氧化能力,但提高了水溶性果胶含量及其抗氧化能力;压差闪蒸处理不利于多酚和黄酮的保留,但提高了多糖和水溶性果胶的含量及其抗氧化能力;蒸汽热烫处理显著提高了光核桃功能性营养物质的含量及其抗氧化能力。线性拟合分析结果表明,西藏光核桃多酚、黄酮、多糖的含量与DPPH方法测得的自由基清除能力呈现显著正相关(R~2=0.756、0.991、0.820),说明可选用DPPH方法作为表征多酚、黄酮、多糖抗氧化能力的有效方法。综合分析认为,蒸汽热烫处理可以显著提高西藏光核桃功能性营养物质的含量及其抗氧化能力,适宜将其作为西藏光核桃深加工的有效预处理方式。
【Abstract】 Effects of supersonic treatment(ST),instant controlled pressure drop(ICPD) treatment,and steam blanching treatment(SBT) on functional components and antioxidant activities of Prunus mira Koehne were investigated.Contents of polyphenols,flavonoids,polysaccharides and water soluble pectin in treated Prunus mira Koehne were determined,and their1,1-diphenyl-2-picrylhydrazyl(DPPH) radical scavenging activity,2,2’-azinobis-(3-ethylbenzlbenzothiazoline-6-sulphonate)(ABTS) radical scavenging activity,ferric ion reducing power(FRAP) were evaluated.The relationship between contents of antioxidant substances and antioxidant activities was analyzed by linear fitting.Comparing with the control group,ST significantly decreased contents of antioxidant substances and their antioxidant capacity except water soluble pectin;ICPD increased polysaccharides and water soluble pectin contents and improved their antioxidant activities,however,ICPD had adverse effects on polyphenols and flavonoids;SBT significantly increased antioxidant substances and enhanced antioxidant capacity.Line fitting analysis presented a positive correlation between contents of polyphenols,flavonoids,polysaccharides and their DPPH radical scavenging activities(R =0.756,0.991,0.820,respectively).Therefore,DPPH radical scavenging activity could represent antioxidant activity of polyphenols,flavonoids,polysaccharides.Above all,Prunus mira Koehne treated by SBT had higher contents of antioxidant substances and exhibited stronger antioxidant activity than the control group.SBT seemed to be an effective pretreatment before further processing for Prunus mira Koehne.
