我国养殖中华绒螯蟹中镉的残留现状及膳食风险评估

【摘要】 为了解我国养殖中华绒螯蟹中镉的残留现状,并对其膳食风险进行评估。本研究于2017年中华绒螯蟹养殖收获期(9-10月),在我国主要养殖区(辽宁、山东和江苏,产量占比为60%)采集了86份(每份30只,公母各半,合计2580个个体)样本,利用ICP-MS测定其全部可食部分中镉的含量,并采用概率评估模型进行膳食风险评估。结果显示:所有样本中全部检出镉,其含量范围在0.029-5.105mg·kg-1,均值为0.154mg·kg-1。有81份样品处于未污染和轻微污染水平,有4份样品处于中度污染水平,而有1份样品则是重度污染,并超出国家限量标准。从养殖地区来看镉的残留量从大至小依次为江苏>山东>辽宁,但地区之间无显著性差异;在江苏地区采集的样本中,洪泽湖(HZ)、高邮邵伯湖(GY)、固城湖(GC)、长荡湖和滆湖(CD)、太湖(TH)和阳澄湖(YC)中Cd含量的平均值分别为0.120、0.078、0.199、0.116、0.076和0.476mg·kg-1,其中太湖和阳澄湖出现显著性差异。膳食风险评估结果显示,86份样品的风险值均小于1,该研究结果表明我国养殖中华绒鳌蟹中存在一定的镉残留情况,但是人群摄入镉的膳食风险相对较低。该研究可为我国水产品质量安全评估提供基础数据支撑。

【Abstract】 In order to understand the present situation of cadmium residues in Chinese mitten crab and evaluate the dietary risk. During the harvest period of Chinese mitten crab breeding in 2017(September to October), 86 portions(30 samples, A total of 2,580 individuals, male and female in half) were collected in major breeding areas in China(LiaoNing, ShanDong and JiangSu, the proportion of yield of 60%). Using ICP-MS determination of cadmium in all edible part of its content, and the dietary risk was assessed with the probabilistic model. The results showed that cadmium was detected in all portions, in a content range of 0.029-5.105 mg·kg-1, with an average value of 0.154 mg·kg-1. There were 81 portions at uncontaminated and light pollution levels, four at moderate pollution levels and one at severe pollution levels that exceeded national limits. From the perspective of breeding area, the residues of cadmium from large to small are LiaoNing > ShanDong > JiangSu, but there is no significant difference between regions. Samples taken in JiangSu region, the Hongze lake(HZ), Gaoyou shaw lake(GY), Gucheng lake(GC), Long swings and Ge lake(CD), Tai lake(TH) and Yangcheng Lake(YC) and Cd content in averages were 0.120, 0.078, 0.199, 0.116, 0.076, and 0.476 mg·kg-1, the Tai lake and Yangcheng lake appeared significant difference. The dietary risk assessment results showed that the risk values of the 86 samples were all less than 1. The results indicated that there was a certain amount of cadmium residues in the breeding Chinese mitten crab, but the dietary risk of cadmium intake in the population was relatively low. This study can provide basic data support for quality safety assessment of aquatic products in China.
