The ovarian development and nutritional quality changes of the wild-caught Portunus trituberculatus during the artificial fattening period

【摘要】 Female swimming crab(Portunus trituberculatus) with fully developed ovary is considered as thehighly nutritious seafood.Although the fishing yield of P.trituberculatus in China has always been huge,its economic value has kept on being low for females due to poor ovarian development and low nutrition value.Artificial fattening is an effective way to improve the value of wild-caught crabs,and this study focused on analyzing the ovarian development and nutritional quality of P.trituberculatus during the artificial fattening period,therefore providing scientific evidence on the effects of artificial fattening on P.trituberculatus but also be conductive to develop the nutritional quality regulation on the wild-caught female crabs during the fattening process.The results showed that the ovaries of the wild P.trituberculatusdeveioped gradually,subsequently the ovarian morphology was more and more plump while the gonadosomatic index(GSI) and total edible yield(TEY) were improved significantly after artificial fattening.The nutritional components of edible tissues were also changed greatly,especially the moisture contentsin the ovaries and hepatopancreas which decreased continually,while the protein and fat contents in the ovaries and only fat in hepatopancreas increased significantly.The content of ESFA in ovaries and hepatopancreas had an increasing tendency after fattening,while the contents of IPUFA and In-3 PUFAdecreased at first and then increased,on the other hand the ratio of∑n-3 PUFA to ∑n-6 PUFA decreased steadily.However,the fatty acid composition in the muscles did not change significantly.The contentof all amino acids increased continuously during the fattening process,on which the content of EAA increased significantly in the early stage of fattening.Consequently,all amino acids had become non-limiting amino acids after fattening.Furthermore,the ratio of EAA/NEAA in ovaries increased continually until the end of fattening.On the other hand,the fatness and TEY of the wild-caughtf!trituberculatusmcreased significantly after artificial fattening,not only that but also the nutritional value wasimproved significantly with exception to the high quality fatty acid contentsin ovaries and hepatopancreas which was slightly lower in both.
