烟草贮藏过程中TSNAs含量变化及对高温处理的响应

【摘要】 以我国云南宾川白肋烟,四川达州晒烟,河南宝丰烤烟调制后的上二棚叶为供试样品,在1年的自然贮藏过程中每隔4个月分别对白肋烟和晒烟取样研究TSNAs含量的变化,另将3种不同类型的烟草在低温(10℃)和高温(45℃)条件下处理研究高温条件对贮藏过程中TSNAs含量的影响。结果表明,白肋烟和晒烟中的TSNAs总量及各成分含量均随着贮藏时间的增加而增加,且在外界温度较高即4月中旬至8月中旬增加幅度最为显著,而各组分中NNN的含量变化最为明显,其中尤以白肋烟的变化幅度更甚。不同类型烟草中,硝酸盐含量较低的烤烟中TSNAs总量及各成分含量很低,且在45℃处理前后的变化不明显,硝酸盐含量较高的白肋烟和晒烟的TSNAs总量及各成分含量也较高,在45℃处理后迅速增加,且其硝酸盐的含量均有所下降,亚硝酸盐含量明显升高。

【Abstract】 Samples of Binchuan burley tobacco, Dazhou sun-cured tobacco and Baofeng fl ue-cured tobacco were collected to investigate changes in TSNAs contents during storage and their response to different temperature treatment. Results showed that both total and individual TSNAs contents in both burley and sun-cured tobacco increased with increase of storage time. The most signifi cant increase occurred in high temperature months, for example, from middle of April until August, especially for NNN in burley tobacco. Both total and individual TSNAs contents in fl ue-cured tobacco which had less nitrate contents were very low and showed non-signifi cant changes after 45℃ treatment. While both total and individual TSNAs contents in burley tobacco and sun-cured tobacco were much higher and increased rapidly after the treatment of 45℃, with nitrate decreasing slightly and nitrite rising signifi cantly.
