滚筒挤压蟹脚壳肉分离装置设计及试验

【摘要】 为实现河蟹蟹脚的机械化壳肉分离,设计了一种辊筒挤压式壳肉分离机构。该机构利用一对直径相同、转动方向相反,转速相同的圆柱滚筒之间的挤压作用进行蟹脚的壳肉分离,通过调整轧辊对的轴心距,可实现不同尺寸蟹脚的加工。为确定蟹脚壳肉分离机构的最佳工作参数,针对样机工作原理和结构特点进行了分析,以此为基础以壳肉分离时间、分离效率及蟹肉品质为研究目标对样机开展了三因素三水平的正交试验研究。结果表明影响分离时间的主次因素排列顺序为辊筒花纹、双辊转速、双辊间隙,影响得肉率的主次因素排列顺序为辊筒间隙、双辊花纹、双辊转速,影响蟹肉品质的主次因素排列顺序为辊筒花纹、双辊间隙、双辊转速。试验结果表明,最佳工作参数条件:辊筒花纹采用条形花纹,双辊转速为35 r/min、双辊间隙为1.2 mm。研究结果可为进一步完善蟹脚壳肉分离机的整体设计与优化提供参考。

【Abstract】 In order to realize the mechanization of crab legs shell and meat separation, a shell meat separate agency with roller extrusion was designed. The shell and meat separation was performed under the pressing of two counter rotating rollers with the same diameter and speed. The three-factor three-level orthogonal experiments for the prototype were carried out to determine the parametric combinations that would achieve the optimum machine performance for separating time, separation rate and meat quality. The results show that the significant effects of roller pattern, rotating speed and tip clearance between two rollers on reducing the separating time were in a decreasing order. The significant effects of rotating speed, roller pattern and tip clearance between two rollers on reducing the separating rate were in a decreasing order. The significant effects of roller pattern, tip clearance between two rollers and rotating speed on reducing the meat quality were in a decreasing order. The results show that the best model of the integrated parameters was as follows: when the rollers with bar-type on them were rotating at the speed of 35 r/min and the tip clearance between two rollers was 1.2 mm. The research results can provide references for the overall design and optimization to improve the product quality.
