草鱼(♀)×赤眼鳟(♂)F1及其亲本肌肉营养成分比较分析

【摘要】 本文以草鱼(Ctenopharyngodon idellus)(♀)×赤眼鳟(Squaliobarbus curriculus)(♂)子一代(F1)、赤眼鳟、草鱼为研究对象,采用国标(GB)方法对其背部肌肉营养成分进行测定,比较F1与草鱼和赤眼鳟肌肉营养成分差异,为其育种和生产提供基础参数。结果表明:F1水分含量为80.38%,粗蛋白、粗脂肪及粗灰分分别占肌肉鲜重的18.82%、1.91%和1.10%。水解氨基酸成分表明,F1鲜味氨基酸总量5.12%显著高于赤眼鳟4.94%和草鱼4.39%(P<0.05),且四种鲜味氨基酸(Asp、Ala、Glu、Gly)均显著高于草鱼(P<0.05),但与赤眼鳟差异性不显著(P>0.05)。游离氨基酸结果表明,F1必需氨基酸含量为297.78 mg/Kg,显著高于赤眼鳟231.63 mg/Kg和草鱼211.99 mg/Kg(P<0.05)。F1与赤眼鳟鲜味氨基酸含量分别为382.22 mg/Kg和384.84 mg/Kg,显著高于草鱼376.97 mg/Kg(P<0.05)。脂肪酸结果表明,F1不饱和脂肪酸占67.08%,显著高于草鱼(52.46%)(P<0.05),但显著低于赤眼鳟(75.69%)(P<0.05)。以上结果表明,F1肌肉营养价值高于草鱼,但低于赤眼鳟。

【Abstract】 The nutritional components in muscle of grass carp(Ctenopharyngodon idellus)(♀) × barble chub(Squaliobarbus curriculus)(♂)(F1), barble chub and grass carp were studied by Chinese standard(GB) to provide useful information for the breeding and culture of F1.The results showed water content of fresh muscle of F1 was 80.38%. The proportion of crude protein, crude fat and crude ash in wet matter were 18.82%, 1.91%, and 1.10%, respectively. The total umami amino acids of F1 was significantly higher than grass carp and barble chub(P<0.05),and the four umami amino acids(Asp、Ala、Glu、Gly) were significantly higher than grass carp(P<0.05).The essential amino acids of free amino acids of F1 was 297.78 mg/Kg, which was significantly higher than barble chub(231.63 mg/Kg) and grass carp(211.99 mg/Kg)(P< 0.05). The umami amino acids of F1(382.22 mg/Kg) and barble chub(384.84 mg/Kg) were significantly higher than grass carp(376.97 mg/Kg)(P< 0.05). The content of unsaturated fatty acids of F1(67.08%)was significantly higher than grass carp(52.46%)(P< 0.05), but significantly less than barble chub(75.69%)(P< 0.05). In conclusion, the muscle nutrition value of F1 was higher than grass carp, but less than barble chub.
