版纳甜龙竹竹笋膳食纤维功能性质研究
Technological and Functional Properties of Dietary Fiber from Bamboo Shoot D.Hamitonii from Xishuangbanna

【摘要】 本实验旨在研究版纳甜龙竹竹笋膳食纤维(DF)的生理作用。膳食纤维从版纳甜龙竹竹笋制备。首先测定了竹笋DF的持水性(WHC)和持油性(OHC);其次采用体外模拟胃液、肠液消化的方法,研究了竹笋DF的生理功能特性,包括对葡萄糖的吸附(GAC)和阻滞(GRI)作用,DF对亚硝酸盐、对胆固醇和胆酸盐的吸附作用,以及DF对淀粉和蛋白质消化率的影响。结果显示版纳甜龙竹竹笋DF具有优异的持水性和持油性。竹笋DF可以延缓淀粉消化速率,但对葡萄糖的吸附作用和阻滞作用较小。竹笋DF对胆固醇有较好的吸附作用,且在pH7(模拟肠液)吸附作用好于pH2(模拟胃液);在模拟小肠环境中(pH7),竹笋DF对胆酸盐和亚硝酸盐有明显的吸附作用,然而在模拟胃液中DF对亚硝酸盐几乎无吸附。竹笋DF对蛋白质的消化率影响较小。上述结果表明,竹笋DF是一种优良的膳食纤维,可能对胆固醇代谢有一定调节功能,可用来开发具有调节血脂和减肥作用的功能性食品。
【Abstract】 Technological and Functional properties of dietary fiber(DF) from bamboo shoot D.Hamitonii were studied.Dietary fiber was prepared from Bamboo Shoot(D.Hamitonii) growing in Xishuangbanna.Firsdy,technological property of water-holding capacity(WHC) and oil-holding capacity(OHC) of dietary fibre from the shoot was determined.WHC and OHC of the bamboo shoot dietary fibre were found to be higher than most DF.Secondly functional properties on physiology were determined by in vitro methods including starch in vitro digestibility(SIVD) and protein in vitro digestibility(PIVD),the glucose adsorption capacity(GAC) and glucose retardation index(GRI),cholesterol binging capacity,nitrite and chlorate absorption capacity.The starch digestibility was delayed by DF,in contrast PIVD,GAC and GRI was not affected.Notably,DF from bamboo shoot D.Hamitonii showed a high cholesterol binding capacity with a higher value at pH7 compared to pH2.Moreover,it also inhibited adsorption of chlorate and nitrite.Adsorption of chlorate and nitrite was obvious in simulated intestinal juice(pH7),whereas no adsorption of nitrite was observed in simulated gastric juice(pH2).Taken together these findings suggest that DF from bamboo shoot D.Hamitonii is an excellent source of dietary fiber and may be a potential ingredient for cholesterol-lowering functional food and diet food.
