【摘要】 试验分别选取新杨绿壳蛋鸡、卢氏鸡、乌鸡所产的绿壳蛋和罗曼褐壳蛋鸡、卢氏鸡所产的褐壳蛋(每个品种均随机选取60个),采用TSS鸡蛋品质测试仪进行了蛋的品质测定。结果表明:5个品种鸡蛋的各项指标中除蛋白高度和蛋黄的灰分含量之间没有显著差异外(P>0.05),蛋重、蛋形指数、蛋壳颜色、蛋比重、蛋黄颜色、蛋壳重、蛋白重、蛋黄重、蛋的各部分所占全蛋比例、蛋的含水量、蛋黄中脂肪含量、蛋白中蛋白质含量以及蛋壳厚度、蛋壳强度等指标间都存在显著(P<0.05)或极显著的差异。而5个品种的蛋白哈夫单位间只有卢氏绿壳蛋和乌鸡绿壳蛋间存在显著差异(P<0.05)。进一步比较分析表明,卢氏绿壳蛋的蛋黄重最大(约17.8 g),占全蛋的比例也最大为34.2%,两者都显著高于罗曼褐壳蛋(P<0.01)、哈夫单位最高;蛋黄中脂肪含量最少,平均占蛋黄的58.79%,低于其他4个品种(P<0.01),且蛋黄颜色较深。更多还原

【Abstract】 This study aimed to compare the quality of green shell eggs from hens of Xinyang,Lushi,Silky fowl and brown -shell eggs from Roman brown hens using TSS instrument(60 eggs per breed).The results showed that there were differences in egg weight,egg shape,shell color,egg density,yolk color,shell weight,albumen weight,yolk weight,water proportion, fat content in yolk,protein content in albumen,shell thickness and shell strength(P<0.05 or P<0.01),but not for albumen height and crude ash content in yolk(P>0.05).The haugh units between hens of Lushi and Silky fowl were significant(P<0.05).Among five species,eggs from Lushi green hens had the heaviest yolk weight at 17.8g,accounting for 34.2%of whole egg,which was significantly higher than those of Roman brown hens(P<0.01),and Haugh units of Lushi hen eggs as the biggest.However,the fat contents of yolk were lowest for Lushi eggs,account for 58.7%,lower than eggs of other breed(P<0.01),and the yolk color was better.更多还原
