生鲜肉类品质快速无损检测技术的研究进展

【摘要】 随着人们对生鲜肉需求量的增加,人们对肉类品质及安全也更加关注,研究和发展生鲜肉品质快速无损检测技术具有重要意义。通过对超声波技术、电特性技术、仿生传感器技术、计算机视觉技术和光谱技术在生鲜肉类无损检测应用的比较研究,综述了它们的检测原理、特点、研究进程、存在问题及发展前景。研究表明,融合多种技术和多元信息,实现对肉类品质多指标实时、快速、准确、全面而可靠的检测评价。是最具潜力的技术。
【Abstract】 With the increment of people’ s demand fresh meat and more concerning a-bout the quality and safety of meats,it is very significant of researching and developing the rapid and nondestructive detection technology for fresh meats.In this paper,some studies have been done about some nondestructive detection technology which were used to detect the fresh meats,such as ultrasonic detection,electrical characteristics detection,biomimic electrode detection,computer vision detection,spectroscopy detection and so on.Their basic principles of detection and characteristic were studied.The research progress and existing problems of them were reviewed.The prospect for development was presented.The study showed that combine with many kind detection techniques and multi - dimension information to detective and evaluate the multi - index traits of fresh meat is the most potential technology. Because it is one real - time,rapid,accurate,comprehensive and reliable technology for fresh meat quality.
