纳米银改性保鲜膜的抗菌及保鲜性能研究

【摘要】 纳米银作为金属银的一种特殊形态,颗粒极其微小、表面积较大且具有显著的表面效应、量子尺寸效应和量子隧道效应,因而使纳米银具有超强的活性及渗透性,其杀菌作用是普通银的数百倍。为了探讨纳米银在食品保鲜中的应用,本文在保鲜膜基材上在不同放电功率、不同放电时间、不同本底气压的条件下制备不同厚度的纳米银薄膜,并对不同实验参数下制备的纳米银薄膜进行抗菌性及保鲜性试验。实验结果表明:其它条件不变的情况下,随着溅射时间的增加,纳米银薄膜的厚度也增加,抗菌性也就越好。在一定厚度范围内,随着纳米银厚度的增加保鲜能力提高,但是随着厚度的进一步增加保鲜能力降低。
【Abstract】 Nano-scale silver films demonstrate the properties of superior activity, remarkable permeability and antimicrobial behavior. The efficiency of bactericidal is hundreds of times larger than that of bulk silver due to the remarkable surface effect, quantum size effect, quantum tunneling effect, and so on. To investigate the effect of nano-silver on food preservation at room temperature, nano-silver coatings with different thicknesses on cling film were prepared by magnetron sputtering at various discharge powers and exposure times. The properties of antibacterial and fresh-keeping were examined. The experimental results show the antibacterial efficiency was increased along with the coating thickness at the beginning, and kept the constant with the exposure period.
