鱼体电导率与鲜度指标的相关性研究

【摘要】 新鲜度是鱼类或鱼类制品质量的一个重要指标,对产品最终质量十分重要。鱼类新鲜度的传统检测方法主要有菌落总数、挥发性盐基态氮(TVB-N)、硫代巴比妥酸(TBA)、鲜度指标(K值)等,但这些检测方法测定耗时长、操作较复杂需要高技术的操作人员,不能满足快速检测的要求。为了满足快速检测淡水鱼新鲜度的要求,本文提出一种快速检测淡水鱼新鲜度的方法——电导法,实验以草鱼为样品,研究-3℃、3℃贮藏过程中鱼肉浸出液的电导率与菌落总数、TVB-N、TBA、K值的相关性。结果表明,电导率与菌落总数、K值、TVB-N、TBA有很好的相关性(P<0.01),相关系数r均大于0.960。因此,电导率法可以作为判定草鱼新鲜度的指标。

【Abstract】 Aquatic food products deteriorate rapidly as a consequence of biochemical and microbial breakdown mechanisms.Within the complex concept of fish quality,freshness is one of the most important attributes.The state of freshness can be described by various properties of the fish which can be assessed by various indicators that are dependent on different biological and processing factors.Traditional methods of determination of fish freshness are total viable count,total volatile basic nitrogen(TVB-N),2-thiobarbituric acid value(TBA) and K value,however,these methods have the disadvantage of time-consuming,and the operations are complicated required highly skilled operators.Grass carp(Ctenopharyngodon idelld) is a popular species of freshwater fish in China because of its rapid growth,high yield,and low price.As a result of the rapid deterioration and compositional variations,the utilization offish as a basic raw material presents difficult processing problems.In order to meet the demands of rapid detection of freshwater fish freshness,a new analytical determination for freshness of fish--electroconductivity method has been demonstrated in this paper.The relationship between electroconductivity of flesh extracts and total viable count,TVB-N,TBA and K value was studied using grass carp as the research object.Freshness indictors of grass carp,stored at -3℃,3℃after preprocessing,were analyzed periodically.The result showed that electroconductivity had a good interrelationship among them(P<0.01),and all the correlations were more than 0.960.Thus electroconductivity can be used as an index offish freshness.
