红花檵木叶片红色素提取及其性质研究

【摘要】 以红花檵木叶片为材料,对其红色素的提取条件及理化性质进行了研究。结果表明,红花檵木叶片红色素提取的最佳条件为:99.5%的甲醇、料液比1:5(g·ml-1)、浸提温度60℃、浸提时间4 h。红花檵木叶片红色素具光、热不稳定性;在强酸性时稳定,微酸近中性时变色。色素抗氧化、还原能力差;对螯合剂、苯甲酸钠敏感。葡萄糖、蔗糖对色素无明显影响,食盐、柠檬酸有增色作用,维生素C具减色作用。金属离子Al3+、Ca2+、Co2+等具增色作用,Cu2+、Mg2+、Zn2+、Mn2+、K+、Sn2+等有减色作用,Fe2+、Fe3+、Pb2+影响色素稳定性。
【Abstract】 Physico-chemical properties and extractions of the leaf red pigment of Loropetalum chinense var.rubrum Yieh were studied.The results showed that the best extraction conditions of the leaf red pigment was 99.5%methanol solution at 60℃for 4 h with the solid-liquid ratio 1:5(g·ml-1).Light and heat lower the stability of leaf red pigment The red pigment is stable with strong acid,but the color changes at weak acid level which closes to neutrality.The pigment has less resistance capability against oxidizing or reducing agent,and it is sensitive to chelating agent or sodium benzoate.Glucose and sucrose almost have no evident effects on the pigment stability.Salt or citric acid strengthen the color,and vitamin C weakens the color.Metal ions Al3+、Ca2+、Co2+ can enhance the color of the leaf pigment,and Cu2+、Mg2+、Zn2+、Mn2+、K~+、Sn2+ is reverse. Fe2+、Fe3+、Pb2+ affect the stability of the pigment.
