【摘要】 目的:为预防北京奥运会期间发生食物中毒,研制餐饮业从业人员健康教育培训相关健康传播材料,并通过目标人群预试验及培训使用后评价,探讨其与目标人群的相关性、可接受性、可行性及适用性。方法:在传播材料研制阶段,在文献检索、经验回顾、需求评估的基础上,分析并针对目标人群的文化特点,充分运用语艺学原理研制了传播材料的初稿。然后选取了北京市两家中等水平餐馆共37名餐饮从业人员,进行了传播材料目标人群预试验,并修改定稿。并在培训使用阶段,随机选取了北京市四个奥运重点区的10个培训场次,对944名直接培训者、545名二级培训者进行定量调查,各区分别通过定性调查的小组讨论进行了使用后评价。结果:根据预试验收集到的目标人群意见,对手册进一步加强了语艺学的视觉化、诗歌化、民谣化、数字化和通俗化的修改和完善,定稿使用后评价调查的两种培训人群均能理解手册文字和图画所表达的信息,受访者均表示非常喜欢该手册。结论:本手册较全面的包含了有效预防食物中毒的核心信息,由于运用语艺学的原理,生动、形象化地传播了相关知识和技能,达到了通俗易懂、简单易学、方便记忆的传播效果,对目标人群适宜,具有较好的针对性、理解性,集知识性和趣味性于一体,得到了目标人群的接受、认可和喜爱,建议今后继续在餐饮业从业人员的相关培训中使用。更多还原

【Abstract】 Objective:In order to prevent food poisoning during the Olympic Games,the research aims to draft health communication materials of health education for food handlers,and to explore the feasibility,acceptability,feasibility and applicability of the materials through pilot experiment in the objective population and evaluation after training on the materials.Methods:During the phase of drafting health communication materials,analyse the culture trait of the objective population on the basis of searching literature,reviewing experience and evaluating demand,and then apply principles of rhetoric to develop the first draft of the communication materials; afterwards select 37 food handlers in two middling restaurants in Beijing to do the pilot experiment of the objective population based on which modify and finalize the draft.During the phase of training to use the materials,randomly select 10 training fields in four key Olympic Games-related zones in Beijing to administer a quantitative survey of 944 direct trainees and 545 secondary trainees,qualitative survey is also done through team discussion in these four zones separately to evaluate the effect of the materials.Results:According to the opinions collected from the objective population through the pilot experiment,modify and consummate the handbook to reinforce visualization,poetization,balladization,digitalization and popularization of rhetoric; the evaluation shows that after finalization of the draft,both the two trained populations can understand the information expressed by the pictures and language printed in the handbook and all the investigated people like this handbook very much.Conclusion:This handbook sufficiently covers the core information about how to prevent food poisoning effectively.Due to the use of the principles of rhetoric,the handbook conveys the relevant knowledge and skills lively and visually thus reaches the goal of communicating popularly,easily and conveniently .Because the materials are suitable to the objective population,have a relatively high pertinence and understanding,and are accepted and liked by the objective population,it is suggested the handbook be kept using in training of food handlers.更多还原
