真空冷冻干燥工艺参数对纳豆激酶活性的影响(英文)

【摘要】 为提高真空冷冻干燥纳豆激酶的活性和效率,确定了最优的冻干工艺参数。通过单因素试验研究了装料厚度对纳豆激酶真空自冻结的影响,正交实验研究了冻干工艺参数对纳豆激酶活力和冻干时间的影响。结果表明:当装料厚度为3~15mm时,纳豆激酶溶液抽真空自冻结最终温度都低于其共晶点温度-23℃;纳豆激酶最佳冻干工艺参数为溶液装料厚度6mm,采用抽真空自冻结,主干燥阶段搁板温度控制在-5℃,干燥室压力为10Pa。冻干后纳豆激酶的活力最高为152.5U(10mg/ml)。
【Abstract】 In order to decrease the loss of nattokinase activity and improve its efficiency during the freeze drying,,the experiment researches of nattokinase solution self-freezing by vacuum pumping were carried out by single factor experiment,and the effect of freeze drying process parameters on nattokinase activity and drying time were researched by orthogonal test.The results showed that the final temperature of nattokinase solution self-frozen by vacuum pumping were lower than its eutectic point when the loading thickness is in 3~15mm;when nattokinase solution loading thickness was 6mm,nattokinase solution was self-frozen by vacuum pumping,the shelf temperature was controlled at -5℃,and dry chamber pressure was 10 Pa.the nattokinase activity was the highest 152.5U(10mg/ml).
