近红外技术在真菌生物量和真菌毒素检测中的研究与应用

【摘要】 几丁质、麦角甾醇和真菌毒素可以反应真菌侵染程度和危害性。对几丁质、麦角甾醇和真菌毒素进行监测,可有效控制霉变的发生。传统检测方法耗时、繁琐,而且不能及时有效的反映检测结果。近红外光谱技术以其简便、快捷等优越性广泛应用于不同领域,在品质检测中有巨大的应用潜力和前景。在介绍近红外技术(NIRS)的发展状况、特点及其在品质分析上的应用的基础上,着重阐述了进红外技术(NIRS)在真菌生物量(几丁质、麦角甾醇)和真菌毒素检测中的研究和进展,并对其应用前景进行了展望。随着不同模型的定标方程的建立和模型数据库的不断完善,NIRS将会在真菌研究领域发挥越来越大的作用。
【Abstract】 The invasion extent and harmfulness of Fungi can be determined by Chitin,ergosterol and mycotoxins.It is important for monitoring Chitin,ergosterol and mycotoxins changes to prevent contamination of forage and feed products and effectively control the sustainable development of the mildew.Predication of these chemical materials was often completed by laboratory analysis which is time-consuming,cumbersome and could not reflect the results in time in the past.Near infrared re- flectance Spectroscopy (NIRS) is a rapid,convenient,high-efficiency,non-destructive and low- cost analytical technique,which has been widely used in various fields such as food field and feed field for quantitative and qualitative analysis.It has a great potentiality of application in quality analysis.In this paper,the principle and the characteristic of NIRS and the applications in food,forage,feed and other agriculture products quality analysis were introduced.Its applications on fungal biomass (chitin, ergosterol) and mycotoxins were mainly reviewed.Near-Infrared Spectroscopy (NIRS) was used to quantify mold by spectrally predicting chitin (a fungal cell wall polymer of glucosamine),ergosterol (a predominate sterol component of nearly all fungi) and mycotoxins (toxic metabolites produced by con- taminated products).It concluded that calibration equations and validation equations of these materials were developed by regressing transformed spectra against chemical date whose coefficients of determina- tion are quite high as well as Near-Infrared Spectroscopy can accurately quantify the contamination of mold.It is also discussed that NIRS will play a more and more great role in the filed of Fungi and have the bright prospect,followed by the establishment of calibration equation and improvement of model database.
