【摘要】 广州等地流传着一种称为西藏"雪莲"的菌粒,其发酵所产生的乳制品具有良好的保健作用。本实验对这种类似于开菲尔粒 (kefir grains)的西藏"雪莲"菌粒进行了研究,从中分离出 GM1、R1以及 C1三种共生菌种,经初步鉴定,GM1属于毕赤酵母属,R1 属于乳杆菌属短乳杆菌种,C1属于葡糖杆菌属。本实验对 R1的培养基进行了优化,研究了 GM1、R1和 C1的适宜生长条件,并对各共生菌的生长和发酵特性进行了初步研究。更多还原

【Abstract】 A kind of ferment dairy called Tibet"snow lotus",which is widespread in Guangzhou and many other cities,is beneficial to people’s health.We researched the Tibet"snow lotus"which was similar with kefir grains and 3 kind of symbiotic strains,including GM1,R1 and C1,were isolated from it.GM1 was identified as Pachia,R1 as Lactobacillus brevis and C1 as Gluconobacter.We optimized the culture medium of R1 and studied the growth conditions of GM1,R1 and C1.Additionally,simply research was carried on the growing and zymolytic characteristics of the symbiotic strains.更多还原
