【摘要】 本文针对高压脉冲电场可破坏物料细胞膜渗透性的原理,综合了国内外关于高压脉冲电场作用果蔬后对渗透性和干燥效果研究成果,阐述了高压脉冲电场在果蔬脱水预处理中的应用的可行性和应用领域,主要在预处理机理,对果蔬形态影响以及作用效果及影响因素等方面作了介绍,并对应用前景进行了展望。更多还原

【Abstract】 this paper based on theory of desiccation for fruit and vegetable,and osmosis of cell is destroied by High Pulsed electrical Field,it analysised the effect of High Pulsed electrical Field processing the fruit and vegetable ,it conclude that the feasibility of High Pulsed electrical Field pretreatment fruit and vegetable .it main introduction is about processing theory and effect and factor of high pulse electrical field ,and it applied prospect .更多还原
