海藻糖的合成及相关酶系的研究进展
Investigation of Trehalose Synthesis and Its Related Enzymes

【摘要】 海藻糖的生理特性和应用特性已经得到广泛的认同,微生物和酶法合成海藻糖是降低海藻糖生产成本最有效的途径,本文主要对海藻糖的合成方法和酶法合成海藻糖相关酶系的来源、特性进行综述。
【Abstract】 Trehalose is a naturally occurring disaccharide which consists of two glucose molecules linked by a 1,1- a -glycosidic bond. Trehalose occurs in bacteria, yeast (e.g., S. cerevisiae), a wide variety of fungi, algae, and a few higher plants. Intracellular trehalose appears to play an important role in the protection of the cells from dehydration and freezing, as well as from other adverse environmental conditions (e.g., heat shock, toxic levels of ethanol, osmotic stress). In addition, trehalose may serve as reserve carbohydrate during periods of carbon starvation. The enzymes which are used in the production process of trehalose are obtained from non-genetically modified strains of arthobactersp.pseudomonas amyloderamosa, bacillus stearothermophilus, aspergillus niger, and bacillus subtilis, sulfolobus acidocaldarius. The paper discusses the synthesis of trehalose and enzymes that are used in the production of trehalose.
