福州市蔬菜卫生品质状况与改善的对策探讨

【摘要】 通过对福州市蔬菜产品的硝酸盐、亚硝酸盐和重金属含量的卫生状况调查、评价和分级,结果表明,福州市蔬菜硝酸盐含量,有65.8%处于轻度污染(1级),34.2%处于中度(2级)以上污染;不同种类蔬菜硝酸盐污染程度由重到轻依次为,绿叶菜类、根茎类、腌菜类、瓜类、白菜类、茄果类、豆荚类和鲜菇笋类;亚硝酸盐含量均处于轻度污染(1级);不同重金属对蔬菜的污染程度由重到轻依次为,Pb、Cr、Cu、Cd、Zn。并据此讨论了提高蔬菜硝酸盐、哑硝酸盐和重金属卫生品质的对策。

【Abstract】 The content situation of nitrate, subnitrate and heavy metal in vegetable products of Fuzhou city was stated in this paper. According to relevant hygienic standards, they were evaluated and graded. The results showed that the content of nitrate in 65.8 percent vegetable products was in slight pollution (grade 1) and that in other 34.2 percent one was in exceed medium pollution (grade 2). Arranged by the extent of nitrate pollution in different types of vegetables, from serious to slight, the order was that green leaves, rhizomes, pickles, melons, Chinese cabbage, eggplants, pods and fresh fungus. And the content of subnitrate in all vegetable products was in slight pollution (grade 1). Arranged by the extent of heavy metal pollution in them, from serious to slight, the order was that Pb, Cr, Cu, Cd and Zn. Measures were put forward to enhance the hygienic quality of nitrate, subnitrate and heavy metal in vegetable.
