磁场对植物油磷酯水化的作用

【摘要】 植物粗油中含有磷脂、蛋白质、悬浮物等胶体杂质,造成浑浊,影响油的品质,因而,食用植物油一般都需经水化脱胶等精炼处理。本文研究了应用磁场处理技术对植物油水化除磷脂过程的强化作用。结果表明,经适当磁处理可使大豆油中残留磷脂量降至未经磁处理的对照样的1/14;大豆油和花生油的粘度降低了1~2%;水的表面张力降低了近1/10;花生油的澄清沉降速度也能提高一半以上。最后简单探讨了磁场的作用机理。

【Abstract】 There are many impurities in crude vegetable oil such as phospholipid, protein, suspension. It may affect on the quality of oil, and cause in turbid. So, the edible vegetable oil has to be refined for degumby hydration. This research works at the application of magnetic treatment for strengthening the dephospholipid by hydration of vegetable. The results showed that using a satisfied magnetic treatment, the remnants of phospholipid in soybean oil can be reduced to less 1/14 than the control sample, the viscocity of soybean oil and peanut oil can be reduced with 1~2%, the surface tension of water can be droped to about 90%, and the settling rate of crude peanut oil can be raise for more than 50%. Finally, the mechanism of magneitc treatment was discussed.
