社交媒体使用对公众食品安全风险感知的影响研究

【摘要】 在媒介化社会中,社交媒体不仅重构了公众获取食品安全风险信息的路径,更深刻改变了风险感知的形态与文化,使公众的风险感知处于流动化状态。本研究聚焦于重大食品安全风险事件——“油罐车混装食用油”事件,探讨新时期社交媒体使用如何影响公众对食品安全风险的感知及其应对行为,旨在为食品安全风险治理提供现实借鉴与有益参考。本研究采用问卷调查和深度访谈相结合的方法,通过理论框架搭建起多个维度以测量公众的风险感知。问卷调查筛选出了250份有效问卷,深度访谈则针对32名相关领域的专业人士和普通消费者展开。通过定性与定量相结合的研究方法,在共时性维度上,揭示了社交媒体如何对公众的食品安全风险感知造成结构性影响;在历时性维度上,进一步探讨了这种流动性影响如何在事件发展中演变,并可能在未来的突发事件中成为潜在风险因素。根据问卷数据分析可知,社交媒体使用显著增强了公众对食品安全风险的即时情绪反应,且在总体情感维度的影响大于认知维度的影响。同时,因媒体报道主要聚焦于社会影响层面,社交媒体使用对个人层面的风险感知影响较小。尽管社交媒体对公众食品安全风险感知的认知维度影响相对较弱,但这种影响具有长期的流动性特征。此外,政府治理信任度在社交媒体使用与食品安全风险感知之间起到了中介作用,这一发现凸显了政治系统、媒介系统和社会系统在风险治理中的深度嵌入和协同作用。结合深度访谈进一步研究发现,社交媒体中的食品安全风险符号从生产、扩散、强化到制度化收编,存在着某种规律性,这一过程与公众风险感知的变化紧密相连。社交媒体使用对公众食品安全风险感知的影响不仅体现在共时性维度的结构性塑造,还体现在历时性维度的流动性演变:在情绪动员和记忆交互下,风险感知在情绪与认知之间、社会与个体层面以及现在与未来之间展现出动态互动,并从当下的具体事件延伸到对未来的潜在风险的持续作用,成为长期的社会信任危机。基于以上发现,本研究提出以主体重构、过程再造与共识弥合为具体路径的媒介化治理进路,以期构建一个多元主体协同参与、动态互动的食品安全风险治理新模式,提升公众的风险意识和应对能力,增强政府治理的透明度和公信力,从而有效应对流动现代性社会中的食品安全风险挑战,推动食品安全治理从“事件响应”向“系统预防”转变,为保障公众健康和社会稳定提供现实借鉴和有益参考。
【Abstract】 In the mediatized society,social media has not only reshaped the pathways through which the public accesses food safety risk information,but has also profoundly transformed the manifestations and cultural dimensions of risk perception,rendering public risk perception increasingly fluid and dynamic.This study focuses on the significant food safety risk event of"edible oil contamination in tanker truck transportation,"investigating how social media usage influences public perception of food safety risks and corresponding behavioral responses in the new era.The research aims to provide practical insights and valuable references for food safety risk governance.Employing a mixed-methods approach combining questionnaire surveys and in-depth interviews,the study establishes a multidimensional theoretical framework to measure public risk perception.Data collection yielded 250 valid questionnaires,while the qualitative component involved interviews with 32 professionals and general consumers in relevant fields.Through a combination of qualitative and quantitative research methods,the study reveals how social media structurally impacts public food safety risk perception in the synchronic dimension and further explores how this fluid influence evolves during the event’s development and may become a potential risk factor in future emergencies.According to the analysis of questionnaire data,social media use significantly enhances the public’s immediate emotional reactions to food safety risks,with a greater impact on the overall emotional dimension than on the cognitive dimension.Meanwhile,due to the media’s focus on the social impact level,the influence of social media use on individual-level risk perception is relatively small.Although the impact of social media on the cognitive dimension of public food safety risk perception is relatively weak,it has a long-term fluid characteristic.Additionally,trust in government governance plays a mediating role between social media use and food safety risk perception,highlighting the deep embeddedness and synergistic role of the political,media,and social systems in risk governance.Further research through in-depth interviews reveals that the symbols of food safety risks on social media follow certain patterns in their production,diffusion,reinforcement,and institutional incorporation,which are closely linked to changes in public risk perception.The influence of social media on public food safety risk perception is not only reflected in the structural shaping in the synchronic dimension but also in the fluid evolution in the diachronic dimension.Under the mobilization of emotions and the interaction of memory,risk perception dynamically interacts between emotion and cognition,between the social and individual levels,and between the present and the future.It extends from the current specific event to the continuous impact on potential future risks,becoming a long-term social trust crisis.Based on the above findings,this study proposes a mediatized governance approach with the reconstruction of actors,the remaking of processes,and the mending of consensus as specific paths.It aims to build a new model of food safety risk governance with multi-actor collaboration and dynamic interaction,enhance the public’s risk awareness and response capabilities,increase the transparency and credibility of government governance,and effectively address food safety risk challenges in the fluid modern society.This approach also seeks to promote a shift in food safety governance from“event response”to“systemic prevention,”providing practical insights and valuable references for safeguarding public health and social stability.
