【摘要】 近年来,饮食文化旅游是现代旅游重要的市场需求。开展针对性的饮食文化旅游,已经引起各地政府与企业的广泛关注。目前,大理古城正处于文化旅游的兴旺时期,白族民俗文化资源对国内外游客具有强大的吸引力。也正是因为国内外游客的需求和大理人民的重视,白族饮食文化在大理古城旅游中才会得到广泛地发展与传承。但是,白族饮食文化在大理古城旅游市场中的知名度远远不如其他民俗文化,这就不利于白族饮食文化传承与发展。本文以大理白族饮食文化的传承与流变为研究对象,通过白族饮食文化传承与流变相关文献的论述,在实地调研和文献调研的基础之上,对大理洋人街西餐厅经营现状和洋人街的兴起、当地政府的投资进行全面分析。然后,本文对大理洋人街的饮食文化现状具体阐述,包括白族文化在建筑格局、饮食文化、语言和音乐方面的表现,并详细阐述西方饮食文化对白族饮食文化的影响。最后,总结本文的主要结论：第一,西方文化和白族文化的互动过程中,大理白族饮食文化在形式和内容上发生了变化,在饮食传承中得到了一定创新和发展；第二,白族民族文化的包容性是其本土文化与外来文化的交流融合的驱动力；第三,当地人接受新的饮食习惯,白族的饮食方式发生部分改变,更接近于健康和科学的饮食方式。更多还原

【Abstract】 In recent years, the diet culture tourism is a modern tourism trend for important market demand. The governments and enterprises have already caused extensive concern to carry out targeted dietary culture tourism. At present. Dali city is in the prosperous period of cultural tourism, domestic and foreign tourists have a strong attraction on cultural resources of Bai nationality’s folk culture. It is precisely because of the domestic and foreign tourists demand and Dali people’s attention, the Bai nationality diet culture widely development and inheritance in the ancient city of Dali tourism will. However, the reputation of Bai nationality’s diet culture in the tourism market in Dali city is far less than other folk culture. In the ancient city of Dali Foreigner’s Street, a combination of Chinese and Western diet culture, the diet culture of the Bai nationality does not receive enough attention, did not become a prominent theme of Foreigner’s Street culture, which is not conducive to the inheritance and development of the Bai Nationality Diet culture.This article regards the inheritance and evolution of Dali Bai cultural diet as the research object, through the ethnic food culture inheritance and rheology of the relevant literature is discussed, on the basis of field investigation and document research, on the Dali Foreigner’s Street restaurant management situation and the rise of Foreigner’s Street, the local government to conduct a comprehensive analysis of investment analysis. Then this article describes diet culture of Bai nationality diet culture on the Dali Foreigner’s Street, including the culture of the Bai nationality in the construction pattern, the diet culture, language and music, and describes influence of Western food culture of the Bai Nationality Diet culture. Finally, summarized the main conclusions of this paper:first, the interaction process of western culture and the culture of the Bai nationality in Dali Bai local culture to play the main role; second, a process of mutual integration of two cultures in enhancement of the Bai People’s sense of national identity and local cultural identity; third, the local people to accept new eating habits.
