【摘要】 刺葡萄是一种营养价值高,具有很强保健功能的野生葡萄。本试验在分析刺葡萄原汁功能成分的基础上,确定刺葡萄原汁为主要原料,按照我国功能型运动饮料的标准,将其配制成功能型刺葡萄运动饮料,并对该饮料的安全性和功能性进行了评价。主要研究结果如下:1、刺葡萄的功能成分与含量分别为:可溶性固形物为15.8%、含酸量为0.35%、可溶性糖含量为14.83%、维生素C含量为25.8mg/100g、蛋白质含量为5.8mg/L、钠19.5mg/L、钾1344.8mg/L、钙110mg/L、镁62.5mg/L、磷140mg/L、铁10.75mg/L、锌1.1mg/L、铜0.3mg/L、原花青素含量为3147mg/L、白藜芦醇含量为0.27mg/L。刺葡萄原汁中含有运动饮料所需的大部分功能物质,是配制功能型运动饮料较佳的原料。2、以刺葡萄为原料,研究了刺葡萄原汁加工、澄清和除酒石的工艺,结果表明采用浓缩与低温处理相结合的方法可得到澄清无酒石的刺葡萄原汁。3、参考功能型运动饮料GB12566-2000标准,确定功能型刺葡萄运动饮料的配方为:纯净水60%,刺葡萄原汁40%,氯化钠70mg/L,硫酸镁60mg/L,维生素C100mg/L,维生素B₁ 3mg/L,维生素B₂ 2mg/L,维生素B₆ 20mg/L,维生素B₁₂ 3μg/L,肌醇50mg/L,牛磺酸100mg/L,赖氨酸50mg/L,原花青素3500mg/L,白藜芦醇20mg/L。4、通过建立小鼠力竭模型,对功能型刺葡萄运动饮料的安全性和功能性进行了评价,结果表明:功能型刺葡萄运动饮料是安全无毒类饮料,具有增强身体机能、缓解体力疲劳、提高运动能力、提高机体免疫力、延缓衰老的功效,符合功能型运动饮料的要求。更多还原

【Abstract】 Brier grape is a wild grape which has high nutritional value and health function.In this study,based on the analysis of pure brier grape juice functional components,brier grape juice was determined as main raw material,On the reference of GB15266-2000,brier grape juice will be the preparation of functional sports drinks, then its safety and efficacy was tested.The main research results are as follows:1.Brier grape’s functional composition and content are dissoluble solids 15.8%,acid 0.35%,dissoluble sugar 14.83%,V_C 25.8mg/100g,protein 5.8mg/L,sodium 19.5 mg/L,K 1344.8mg/L,calcium 110mg/L,magnesium 62.5mg/L,P 140mg/L, rail 10.75mg/L,zinc 1.1 mg/L,copper 0.3mg/L,proanthocyanidins 3147mg/L, resveratrol 0.27mg/L。It is a good raw material for sports drinks,because it content most functional components for sports drinks.2.Brier grapes as raw material,the technology of brier grape processing,clarifying and removing tartar were studied,the result showed that concentration with cold treatment is good methods for high quality pure grape juice.3.On the reference of GB12566-2000,it was indicated that the best proportion of the components in functional brier grape sports drinks was pure water 60%,pure brier juice 40%,sodium chloride 70mg/L,Magnesium Sulfate 60mg/L,V_C100mg/L,V_B13 mg/L,V_B22mg/L,V_B620mg/L,V_B123μg/L,inositol 50mg/L,taurine 100mg/L,Lysine 50mg/L,proanthocyanidins 3500mg/L,resveratrol 20mg/L。4.Through using exhaustive mouse model,brier grape’s safety and function were evaluated.The results showed that functional brier grape was safely and have many efficacies,such as strengthening bodily functions,alleviating physical fatigue,raising exercise capacity,enhance immunity,Anti-aging and so on,it meet the performance requirements of the sports drinks.更多还原
