【摘要】 《老残游记》这部小说是借游方郎中老残摇串铃四处行医时的所见所闻,痛斥晚清社会的黑暗腐败,同时也写到了所到之处的优美景物和民情风俗。随着老残的足迹所至,可以清晰地看到清末齐鲁一带社会生活的面貌。此书虽为风物游记,但也有不少地方从侧面反映了当时齐鲁的饮食概况,笔者试从饮食文化这一角度对小说作一粗浅分析,通过对《老残游记》中饮食文化的区域性和层次性,小说中的饮食构成、饮食考论,小说所反映的晚清时期齐鲁饮食文化的独特性,小说中饮食描写的文学意义等五个方面的研究,一方面在对清末齐鲁这一区域饮食深入考察的基础上来透视晚清时代齐鲁饮食的特征,另一方面,通过这种分地域深入考察当地饮食文化的方法,从而避免中国饮食文化研究中以偏概全的流弊,进而有助于对整个中国饮食文化的历史进行接近客观实际的概括。更多还原

【Abstract】 This novel“The Travels of Lao Can”takes advantage of strolling doctor’s saw and heard, bitterly attacking the late Qing Dynasty society’s rotten, also points out graceful scenery and the people’s custom .Follow Lao Can’s footmark, we can clearly see Qilu area’s social life . This novel is a travel notes, but also has reported the food and drink of Qilu of that time. The author tries on to make a shallow analysis to the novel from diet culture’s angle. Through studying five aspects of“Travels of Lao Can”, food culture’s region and levels, diet composing, Research on diet, characteristic is reflected from“Travels of Lao Can”, the literature significance of diet describing, On the one hand, comes up the perspective of Qilu diet characteristic at the end of Qing Dynasty, studying Qilu diet characteristics as a basis for the late of Qing dynasty; on the other hand, through this sub-regional in-depth study of local food culture, thus avoids the prevalent abuse which in the Chinese diet culture research draws conclusions from a part, then is helpful to carries on to the entire Chinese diet culture history approaches the objective reality in general.更多还原
