【摘要】 由于中国的工业化进程起步较晚，可以说在20世纪90年代以前的中国是不存在现代化厨房的。中国的现代化厨房是由欧美的现代化厨房演变而来，但是由于中国饮食在食物结构和烹饪方式等方面的特点，完全照搬会出现很多问题。所以，论文在分析现代集成式厨房的主要功能、基本设施、空间组成开始，重点针对中国家庭，研究厨房的合理操作流程、厨房的功能分区和布局等决定厨房设计的重点和难点。一方面研究适合不同目标人群的现代集成式厨房；另一方面，中国正进入老龄化社会，所以，论文把通用设计概念引入厨房设计，把人机工程学和通用设计进行了有机结合和分析，提出了通用厨房的概念。设计启于需求，本论文从需求分析出发，以现代集成式厨房为切入点，通过需求的理论分析及研究，建立需求与市场的关系。从而，建立从需求到概念的一种映射，并建立设计需求模型。本论文是建立在实际调查(调查问卷、市场调研)基础上，通过典型目标人群的用户访谈，确定目标人群的问题点及需求点，建立问题-需求-概念的映射，最终形成设计需求模型，从而形成现代集成式厨房新的理念及发展趋势。本文以调查现状厨房空间存在的问题为基础，通过典型人群的入户访谈，针对目前存在的问题进行深层次的分析研究，剖析其原因所在；分别设计出了针对青年人群、中年人群、老年人群的现代集成式厨房。并结合现代生活行为模式和对厨房空间的使用行为规律，依据人体工效学原理，找到厨房概念设计的关键点。希望能够为现代厨房的研究以及生产制造提供借鉴和参考。更多还原

【Abstract】 Chinese industry development starts late, so there’s not modern kitchen in 1990s. Chinese modern kitchen is introduced into by Europe and America, but as a result of the Chinese food structure and cooking methods, there are many problems if we imitate it completely. Therefore, the paper analysis main functions of the modern integration type kitchen, the basic facility, the spatial composition. According to the structure of the Chinese families, the article studies the operation flow, function district and the layout of the kitchen which decide the key points and the difficulty on design. One side, the paper studies suits on the different goal crowd of the modern integration type kitchen; on the other hand, China is entering aging society, therefore, the paper introduces the general design concept of the kitchen design. Carrying on the manmachine engineering and the universal design, the paper introduces the universal kitchen.The product design starts with the consumer demand. The paper analyzed the needs, and takes the modern integration type kitchen as the cut-in point. Through the theoretical analysis and research, establishes the relations from the need to the market. The paper is the establishment in the thorough investigation (market research, market analysis) in the foundation. Through typical goal user’s interviews, the paper confirms goal crowd’s questions and demand points. The establishment question-demand-concept mapping, forms the design demand model. Thus the paper forms new ideas of the modern integration type kitchen and the trend of its development.The article takes investigations on the present situation of the kitchen space, and defines the goal market: Young group, middle-aged group, agedness group. Through the typical crowd’s residence interviews, the paper analyses deeply on the questions which exist in kitchens at present, and analyses the modern life behavior pattern and use behavior rule in kitchen. Based on the human body work efficiency study principle, the paper founds the key points of the kitchen conceptual design and offer three design proposal.
