不同品种桑树雄花茶营养成分与活性成分分析
Analysis of Nutrient and Active Components in Different Staminate Flower Tea of Mulberry
【摘要】 以16种桑树品种雄花茶为研究对象,测定分析桑树雄花茶的水浸出物、可溶性糖、游离氨基酸、总黄酮、总多酚和1-脱氧野尻霉素(1-deoxynojirimycin, DNJ)含量以及抗氧化活性,并通过隶属函数法综合评价桑树雄花茶的营养价值。结果表明,桑树雄花茶的水浸出物含量在40%左右;在16个品种间,5个营养成分与活性成分指标存在一定差异,变异系数均大于30%;抗氧化活性也存在一定差异,其中,雄花茶铁还原氧化能力品种间差异较大,变异系数大于30%。营养价值综合得分由高到低依次为那兰1号、农桑14号、农桑12号、桂5×A9、恭同7号、花菜桑、鲁诱6号、长2、旅桑1号、泉桑1号、长1、桂7626、华交8号、466、K2和果选9号。综合各桑树雄花茶的营养成分含量、活性成分含量及抗氧化能力,筛选桑树雄花茶制备用品种宜从那兰1号、农桑14号、农桑12号及桂5×A9等营养价值综合得分较高品种结合产量统计与感官评价进行下一步选择。
【Abstract】 The contents of water extract, soluble sugars, free amino acids, total flavonoids, total polyphenols, and 1-deoxynojirimycin(DNJ), as well as the antioxidant activity of 16 types of staminate flower tea of mulberry were determined and analyzed. The nutritional value of mulberry staminate flower was comprehensively evaluated by the method of membership function. The results showed that the contents of water extracts were around 40%. There were some differences between 5 indexes of nutrients and active components of 16 staminate flower teas, all with coefficients of variation greater than 30%. There were also some differences in antioxidant activity between these varieties, especially in ferric ion reduction and antioxidant ability, which had a relatively greater coefficient of variation over 30%. The comprehensive scores of nutritional values from high to low were Nalan 1, Nongsang 14, Nongsang 12, Gui 5×A9, Gongtong 7, Huacai Sang, Luyou 6, Chang 2, Lyusang 1, Quansang 1, Chang 1, Gui 7626, Huajiao 8, 466, K2 and Guoxuan 9. Based on the comprehensive analysis of the nutrient content, active component content and antioxidant capacity of all the mulberry staminate flower tea, it is recommended that mulberry varieties with higher comprehensive scores of nutritional values such as Nalan 1, Nongsang 14, Nongsang 12 and Gui 5×A9 should be selected for the preparation of staminate flower tea and for further selection in combination with yield analysis and sensory evaluation.
