载铬纳米壳聚糖对杜×长×大肥育猪生长、胴体品质和肉品质的影响

【摘要】 试验旨在研究不同水平的载铬纳米壳聚糖(CNP-Cr)对肥育猪生长性能、胴体品质和肉品质的影响。选择120头平均体重为65 kg的杜×长×大三元杂交猪,随机分为4组,分别饲喂含0、100、200、400μg/kg CNP-Cr(以铬含量计)的饲粮,预试期5d,正试期35d。结果显示:与对照组相比,饲粮添加100、200、400μg/kgCNP-Cr对肥育猪日增重、日采食量和耗料增重比无显著影响;200μg/kgCNP-Cr组瘦肉率提高了8.23%(P<0.05),3个试验组背膘厚和脂肪率均较对照组降低(P<0.05),200、400μg/kgCNP-Cr组眼肌面积增加(P<0.05),肌肉滴水损失下降(P<0.05);3个试验组肌肉中肌红蛋白含量均升高(P<0.05);200μg/kgCNP-Cr组血清中游离脂肪酸含量和总蛋白含量均高于对照组和100μg/kgCNP-Cr组,试验组血清尿素氮含量有下降趋势(P>0.05),葡萄糖水平较对照组降低(P<0.05);200、400μg/kg CNP-Cr组血清脂肪酶活力升高(P<0.05),3个水平的CNP-Cr使脂肪中激素敏感脂肪酶活性升高(P<0.05),而脂肪合成酶活性降低(P<0.05)。结果提示,CNP-Cr可影响机体葡萄糖和脂肪代谢,从而影响胴体组成和肌肉品质,以200μg/kg剂量组效果为佳。

【Abstract】 The research was conducted to study the effects of different levels of CNP-Cr on growth performance, carcass characteristics, meat quality in flnishing pigs. A total of 120 crossbred pigs(Duroc×Landrace×Yorkshire) with initial body weight of 65 kg were randomly divided into four groups, each group with three pens, six pigs per pen. Pigs were fed on the same basal diet supplemented with 0(control), 100, 200, 400 μg/kg Cr from Chitosan nanoparticles loaded with chromium ions(CNP-Cr) for 35 days. The results showed that supplementation of CNP-Cr did not signiflcantly influence average daily gain, average feed intake and feed conversion rate(P<0.05). CNP-Cr at 200 μg/kg enhanced carcass lean ratio by 8.23%(P<0.05). The back fat thickness and carcass fat ratio of the three treatment groups were significantly lower than control group(P<0.05), the longissimus muscle area and drip loss were signiflcantly increased in pigs fed with diets supplemented with 200 and 400 μg/kg CNP-Cr(P<0.05), and the myoglobin content in the muscles of the pigs in the three treatments was signiflcantly increased(P<0.05). The levels of free fatty acid and total protein in 200 μg/kg CNP-Cr group were signiflcantly higher than those in control group and the 100μg/kg CNP-Cr group. The concentration of serum urea nitrogen in pigs fed with diets supplemented CNP-Cr showed a downward trend, and the glucose level was signiflcantly decreased by CNP-Cr supplementation(P<0.05). CNP-Cr at 200 and 400 μg/kg signiflcantly increased serum lipase activity, and HSL activity in the fat of the treatments signiflcantly increased and the FAS activity decreased signiflcantly compared with control group(P<0.05).The results indicated that CNP-Cr could influence glucose metabolism and fat metabolism, consequently affect carcass composition and muscle quality. 200 μg/kg CNP-Cr is recommended as the optimal supplemental level.
