白银市主栽大田小麦加工品质实验研究及环境影响评估
Processing quality and environmental impact assessment of main field wheat in Baiyin City
【摘要】 【目的】针对白银市大田小麦加工品质及流变学特性开展研究,评估白银市小麦品质及产业发展现状,定性研究自然环境对小麦品质的影响规律,为当地选种、品种改良、产业规划提供理论参考.【方法】采用大田抽样的方法从白银市小麦主产区基本农田抽取13个品种、27份小麦籽粒样品,基于国家标准系统测定了小麦品质并进行数据相关性分析.【结果】待试小麦籽粒中,仅吸水率变异系数小于10%,籽粒硬度、籽粒蛋白质含量、湿面筋含量、延伸度对应变异系数介于10%~20%,其余品质指标变异系数均大于20%.【结论】白银市大田小麦多项品质指标均高于甘肃省或全国平均值,整体达到中筋水平;各小麦品种之间存在明显的品质差异,同一产区内不同品种"插花"现象十分普遍,小麦品质参差不齐,不利于小麦产业健康发展;白银市大田小麦拉伸特性普遍偏弱,宜于挤压成型、粉碎研磨,适合加工饼干、代餐粉等;小麦品质在样点县间呈明显差异化分布,环境因素对小麦品质存在显著影响,海拔、纬度、降水量越高,小麦蛋白质含量、主要流变学特性呈提升趋势.
【Abstract】 【Objective】 In order to provide theoretical reference for local seed selection, variety improvement and industrial planning, an experiment is conducted to investigate the processing quality and rheological characteristics of main field wheat in Baiyin City, to evaluate the current situation of wheat quality and industrial development, and qualitatively to investigate the natural environment effect on wheat quality.【Method】 Using main field sampling method, 13 varieties and 27 wheat grain samples are selected from the basic farmland of Baiyin main wheat production area.Moreover, the wheat quality admeasurement is performed based on the national standard and the data correlation analysis is carried out.【Result】 In the tested wheat grain samples, only the variation coefficient of water absorption is less than 10%,the variation coefficients of grain hardness, grain protein content, wet gluten content and elongation are between 10%~20%,and the variation coefficients of other quality parameters are more than 20%.【Conclusion】 Many quality parameters of main field wheat in Baiyin City are higher than the average value of Gansu Province or the whole country, reaching the level of medium gluten.There are obvious quality differences among these different wheat varieties.Flower arrangement of different varieties in the same production area is very common, and the wheat quality is uneven, which is not conducive to the healthy development of wheat industry.The tensile characteristics of main field wheat in Baiyin City is generally weak.It is suitable for extrusion, grinding and processing biscuits, meal replacer, etc.The distribution of wheat quality is significantly different among counties, and environmental factors had significant effects on wheat quality.Higher altitude, latitude and precipitation will lead to the improvement of wheat protein content and main rheological properties.
