辣椒素的抗疲劳作用及其作用机理研究进展

【摘要】 辣椒素作为辣椒中主要的辛辣成分,同时也是重要的生物活性物质。大量的研究表明,辣椒素具有广泛的食用和药用价值,如作为食品添加剂和抗炎、抗癌、抗肥胖、抗疲劳等作用。文章介绍了辣椒中辣椒素作为食品添加剂的应用及其生物活性功能,并探讨了辣椒素的理化性质和相关提取方法,着重论述了其抗疲劳的机理研究,以期为辣椒素的深入研究提供理论支持。

【Abstract】 Capsaicin is the main pungent ingredient in Capsicum annuum L.and it is also an important bioactive substance.A large number of studies have shown that capsaicin has a wide range of edible and medicinal values,such as being used as food additive and anti-inflammatory,anti-cancer,antiobesity,anti-fatigue and other functions.In this paper,the application of capsaicin in Capsicum annuum L.as a food additive and its biological activity functions are introduced,its physical and chemical properties and related extraction methods are discussed,the research progress of its antifatigue mechanism is emphatically described,in order to provide theoretical support for the in-depth study on capsaicin.
