‘花盖梨’果实香气成分的GC-MS分析
GC-MS Analysis on Aroma Components of Huagaili Pear Fruits
【摘要】 研究不同萃取头对‘花盖梨’果实香气成分的影响,旨为‘花盖梨’品质评价和香气育种提供科学依据。以‘花盖梨’成熟果实为试材,通过固相微萃取(solid phace microextraction,SPME)结合气相色谱-质谱联用(GC-MS)技术,利用7种萃取头对果实香气成分进行萃取,并分析了不同萃取头萃取物质种类和相对含量的变化。结果表明:7种萃取头共萃取到香气成分8类31种,包括醛类物质6种、醇类物质7种、酯类物质7种、醚类物质2种、酮类物质2种、酸类物质1种、烷烃类物质4种、其他类物质2种。其中,DVB/CAR/PDMS (涂层厚度50/30μm)、PDMS/DVB (粉头)和PDMS/DVB (蓝头)3种萃取头均萃取到香气物质14种,但前者萃取到的物质相对含量明显高于后两者;其他4种萃取头萃取到的香气物质种类及相对含量均较少。‘花盖梨’果实香气以醛类物质为主,不同萃取头萃取到的香气物质种类和含量均存在一定差异。在‘花盖梨’品质评价和香气育种中,可选择DVB/CAR/PDMS (涂层厚度50/30μm)萃取头对果实香气物质进行萃取。
【Abstract】 Studying on the effects of different extraction fibers on aroma components of Huagaili pear fruits could provide scientific basis for the quality evaluation and aroma breeding. Huagaili pear fruits were taken as materials, and the solid phace microextraction(SPME) with gas chromatography-mass spectrometry(GC-MS) was used,seven different extraction fibers were used to analyzed the extractive substances types and their relative contents. The results showed that thirty-one components belong to eight types including six aldehydes,seven alcohols,seven esters,two ethers,two ketones, one acid, four alkanes and two others were i dentified with seven different extraction fibers. The extraction fiber of DVB/CAR/PDMS(coating thickness 50/30 μm),PDMS/DVB(pink) and PDMS/DVB(blue) extracted fourteen aromatic components,but in terms of the relative content,the former was higher than the other two,the aromatic components and relative contents extracted by the other four extraction fibers were low. In conclusion, the aroma of Huagaili pear fruits is mainly composed of aldehydes,and there are certain differences in the components and contents of aroma detected by different extraction fibers. DVB/CAR/PDMS(coating thickness 50/30 μm) can be used in the study of extraction of aroma components of Huagaili pear fruits in the quality evaluation and aroma breeding.
