食用植物油中的色素检测方法研究
Study on Determination of Pigment in Edible Vegetable Oil
【摘要】 胭脂树橙和玉米黄质是GB 2760允许添加的着色剂,在使用植物油中的限量分别为20mg/kg、5000mg/kg。天然的提取的胭脂树橙和玉米黄质不但具有良好的生物安全性,在抑制肿瘤方面还具有明显作用,是不可多得的天然添加剂,但是从GB2760限量也可以看出,这两种化合物的添加也不是无限制的,首先是因为添加添加剂在提取是很难纯化,其次是因为在使用过程中稳定性相对较差。在本文研究过程中,发现:(1)建立了食用植物油中胭脂树橙和玉米黄质的检测方法,加标回收良好;(2)在酸性条件下,玉米黄质极不稳定,虽然很多研究表明玉米黄质是生物安全系数很高的添加剂,但是其在酸性条件下,结构变化仅限于推测,其生物安全性还有待研究;(3)在研究过程中还发现,即使是胭脂树橙的标准品溶液在20℃光照放置一段时间发生了不同程度的降解,因此在使用过程中需谨慎。
【Abstract】 Bixin and YMHZ are colorants permitted by GB2760,with a limit of 20,5 000 mg/kg. The extracted Bixin and YMHZ not only have good biological safety,but also play an important role in inhibiting tumor,and they are rare natural additives. But it can also be seen from the limit of GB2760 that the addition of these two compounds is not unlimited,first because the additive is difficult to purify in extraction,and secondly,because the stability is relatively poor in the process of use. The results were as follows: A method for the detection of Bixin and YMHZ in edible vegetable oil was established,and the standard recovery was good. YMHA was very unstable under acidic conditions. Although many studies showed that YMHZ was an additive with high biosafety factor,it was found to be an additive in acidic condition. The structural changes are limited to conjecture,and its biological safety is still to be studied. During the study,it is also found that even the standard solution of Bixin has been degraded in varying degrees at 20 ℃ for a period of time,so it is necessary to be careful in the process of application.
