【摘要】 采用多孔银丝作为表面增强拉曼(SERS)基底,建立了快速检测食品中人工合成着色剂新红的分析方法。食品样品经提取、净化去除基质中大分子干扰物,采用25 mV/s扫速制备的银丝基底静置萃取1 min后即进行拉曼测试。结合固体标准品拉曼谱图和密度泛函理论计算结果对新红表面增强拉曼谱图中的特征峰进行了归属,以对新红进行定性和定量测定,结果表明1592cm-1处的峰强度与新红浓度的线性范围为(1×10-62×10-5)mol/L,检出限为5×10-8 mol/L。该方法原位萃取、测试时间只需2 min,回收率在87.8%93.8%,相对标准偏差小于6.5%可应用于食品样品中新红的快速检测。

【Abstract】 Rapidly screening method for artifically synthetic colorant newred in food was established based on porous Ag fibers as surface enhanced Raman scattering(SERS) substrate. The food sample was extracted and purified to eliminate the macromolecule disruptors then, immersed in Ag fiber substrate synthesized with electrochemical assistance by Cyclic Voltammetry(CV) scanning at 25 m V for 1 minute. After that, the silver substrate was directly introduced for Raman analysis. The SERS spectrum of newred was attributed together with standard Raman and theoretical Raman spectra, followed by qualitative and quantitative analysis. The band at 1592 cm-1 was selected as the characteristic peak for quantitative determination, showing good linearity from 1×10-6 to 2×10-5 mol/L and detection limit of 5×10-8 mol/L. The proposed method was successfully applied to fast identify of newred in food with recovery in the range of 87.8%93.8% and good RSDs less than 6.5%.
