高效保留米糠油营养成分的最佳吸附脱色条件研究
Optimum Adsorption Bleaching Conditions of Rice Bran Oil to Retain Nutrients Efficiently
【摘要】 研究吸附脱色工艺条件(吸附剂种类、吸附剂用量、吸附脱色温度、吸附脱色时间)对米糠油吸附脱色综合效果(脱色率及谷维素、甾醇、维生素E等营养成分保留率和反式脂肪酸生成量)的影响。通过单因素试验和正交试验全概率分析得到最佳吸附脱色工艺条件:吸附脱色剂为活性白土,添加量为油重的3%,吸附脱色温度120℃,吸附脱色时间25 min。在此条件下得到脱色米糠油的色泽为Y20 R2.1(罗维朋比色槽25.4 mm),谷维素保留率为96.74%,甾醇保留率为90.60%,维生素E保留率为78.68%,反式脂肪酸未检出。脱色米糠油中营养成分得到了很好的保留。
【Abstract】 The influence adsorption bleaching conditions(including decolorant dosage,decolorant types,bleaching temperature and bleaching time) on decolorization effect of rice bran oil and the retention rates of oryzanol,sterols and vitamin E were investigated.The optimum adsorption bleaching processing conditions were studied by single factor experiments as well as the probability analysis of orthogonal experiments.The optimum adsorption bleaching processing conditions were activated clay as decolorant,decolorant dosage of 3%,bleaching temperature at 120℃and bleaching time of 25 min.Bleached rice bran oil was obtained through the verification tests on the conditions above,and the Lovibond color of the oil was Y20 R2.1(25.4 mm).The retention rates of oryzanol,sterols and vitamin E were 96.74%,90.60%and 78.68%respectively.The trans fatty acids were not detected in all oil samples.The more nutrients were retained in the decolorization rice bran oil.
