【摘要】 目的探讨农村自办家宴聚餐食品安全监督管理对策。方法通过对农村自办家宴聚餐存在的食品安全隐患分析,提出农村自办家宴聚餐食物中毒预防的有效途径。结果农村自办家宴聚餐普遍存在卫生设施简陋、从业人员缺乏管理、原料采购把关不严、加工过程交叉污染、超负荷运作、餐具容器不消毒等食品卫生问题。结论农村自办家宴聚餐食品安全监管指导需要从完善制度、加强关键点控制、加强宣传教育和落实应急准备等方面深化管理。更多还原

【Abstract】 Objective This study was aimed to explore the food safety supervision and management countermeasures for the rural family dinner. Methods Analysis on food safety at rural feast dinner was conducted, and an effective way of preventing food poisoning in rural feast dinner was put forward. Results For the rural feast dinner, problems on food hygiene were wide spread.Health facilities were crude, practitioners were not properly managed, procurement of raw materials were not strict, the process of cross contamination existed, overload operation was common, tableware and containers were not disinfected. Conclusion The regulatory guidance for rural feast dinner food safety should be focused on perfecting the system, strengthening the control of key points, strengthening publicity and education, and implementing emergency preparedness and management.更多还原
