电子鼻在食品科学中的应用
Application of Electronic Nose in Food Science
【摘要】 电子鼻是新近发展起来的模拟人工嗅觉的设备,由于其费用经济,检测速度快,可以客观、自动、无损的鉴定食品的风味物质,因此在食品工业中的应用越来越广泛.主要综述了:①电子鼻的结构,重点介绍了电子鼻的样品处理系统和检测系统,分析了样品处理方法、原理及其需要优化的参数,同时对检测系统的传感器类型、原理及其优缺点进行了介绍;②电子鼻在食品科学的几个方面如过程监控、真伪鉴别、货架期以及新鲜度等方面的应用.由此可以看出电子鼻必将得到越来越广泛的应用.
【Abstract】 Electronic noses( e- noses) are newly developed instruments which mimic the artificial sense of smell. These devices are used more and more widely because the e- noses can detect and distinguish odors objectively,precisely,automatically,non- destructively and at low cost. The review : ① presents the structure of electronic nose,describes the sample handling system and detection system,analyses the sample handling methods,principle and the main parameters that have to be optimized,introduces types, mechanisms,advantage and disadvantage of common electronic- nose gas sensors. ② reviews the application of electronic nose in food science in particular in the field of process monitoring,shelf- life investigation,freshness evaluation and authenticity assessment. It is evident from the literature survey that the e- Nose will be more widely used.
