高粱米不同溶剂提取物的抗氧化活性研究

【摘要】 研究不同极性溶剂对高粱米提取物中活性物质含量及抗氧化活性的影响。结果表明,不同溶剂对高粱米中多酚、黄酮含量及抗氧化活性有明显的影响。80%丙酮提取物中的多酚、黄酮含量最高,分别为6.49 mg GA/g和61.2 mg/100 g,表现出较好的抗氧化能力。其次80%甲醇和80%乙醇提取物也表现出较好的抗氧化能力。与此相反,正己烷提取物中的多酚、黄酮含量最低,分别为1.30 mg GA/g和9.6 mg/100 g,抗氧化能力较差。相关性分析表明,提取物中的多酚、黄酮含量与其抗氧化能力有较高的相关性,说明高粱米不同提取物抗氧化能力的差异主要来源于提取物中抗氧化物质的量的差异。

【Abstract】 The effects of different polar solvents on the bioactive substances content and antioxidant activity of extracts from sorghum rice without husk were studied in this paper.The results showed that,the different solvents had a significant influence on the level of total polyphenols,flavonoids and antioxidant activities of extracts from sorghum rice.80% acetone extract had the highest polyphenols and flavonoids,6.49 mg GA/g and 61.2 mg/100 g respectively,and it exhibited better antioxidant activities.The 80% methanol and 80% ethanol extracts also exhibited better antioxidant activities.And then,80% methanol extract and 80% alcohol extract exhibited better antioxidant activities as well.Conversely,the contents of polyphenols and flavonoids of n-hexane extract were the lowest,1.30 mg GA/g and 9.6 mg/100 g respectively,as well as their antioxidant activities.Correlation analysis revealed that the content of polyphenols and flavonoids was well correlated with antioxidant activities of extracts from sorghum rice,which indicates that these differences in antioxidant activities were due primarily to differences in the content of antioxidants among different extracts from sorghum rice.
