几种生物特征识别技术在食品有害小分子物质快速检测中的应用

【摘要】 食物中有毒有害小分子的检测方法一直是食品安全的研究热点。仪器法检测成本高、耗时长。为了促进开发新型的快速检测技术,该文介绍了单链抗体、核酸适体和抗运载蛋白为代表的3种生物特征识别材料,比较了各检测体系的特异性、灵敏度、稳定性及实用性,并在其应用研究进展的基础上,对今后的研究方向进行了展望,以期推进食品安全快速检测技术的发展。

【Abstract】 A sensitive monitoring of contaminants in food,such as chemical pollution,antibiotics,pesticide,toxin,is essential to assess and avoid risks for human and environmental health.The instrument-based detection methods,for example,chromatography,are high-cost and time-consuming.For determination of small molecule contaminants,the rapid detection method had been researched,based on immunology and molecular biology technology with biometric elements employing.Recently a lot of research effort has been dedicated to the development of novel recognition elements with exceptional characteristics,such as high affinity and specificity for their targets,being fast,cheap and animal-friendly production avoiding batch to batch variations,being stable and easy to be modified.This review discussed three of these innovative affinity-based recognition elements,namely,scFv,aptamer and anticalin,and gave an overview of applications for food contaminants detection.The specificity,sensitivity,stability and applicability of method based on these biometric elements were compared as well.The future research orientation was prospected to promote the safe and rapid detection of low molecular weight contaminants in food.
