【摘要】 对金银木的根、茎、叶、花、果5种器官内的水分、粗脂肪、维生素C、类胡萝卜素含量进行了测定,并考察了过氧化氢、温度和光照对类胡萝卜素稳定性的影响.结果表明,金银木的叶、花、果中含有丰富的粗脂肪、类胡萝卜素和维生素C,其含量分别为叶(粗脂肪4.93 g/100 g,类胡萝卜素3.83 mg/100 g,VC52.3 mg/100 g)、花(粗脂肪3.12 g/100 g,类胡萝卜素2.22 mg/100 g,VC61.4 mg/100 g)、果(粗脂肪9.19 g/100 g,类胡萝卜素8.84 mg/100g,VC 112.9 mg/100 g);类胡萝卜素的稳定性在低氧化剂、25℃和避光条件下较好.更多还原

【Abstract】 The content of water,crude fat,vitamin C and carotenoid of five organs from Lonicera maackii Maxim was determined,morever,the influence of hydrogen and temperature and light on carotenoid stability was studied.The results showed that it was rich in the crude fat,vitamin C and carotenoid of leave(crude fat 4.93 g/100 g,carotenoid 3.83 mg/100 g,VC52.3 mg/100 g),flower(crude fat 3.12 g/100 g,carotenoid 2.22 mg/100 g,VC 61.4 mg/100 g),fruit(crude fat 9.19 mg/100 g,carotenoid 8.84 mg/100 g,VC 112.9 mg/100 g) respectively.The carotenoid was stable at 25 ℃,dark and low-oxidant conditions.更多还原
