【摘要】 20世纪中后期,伴随着科学技术的进步,人们的物质生活有了翻天覆地的变化,人们对"饮食"这个生活基本要素之一的主体结构和标准,也提出了新的期望。更美味、更健康、更安全、更方便、更有营养,是人们对新的饮食标准的衡量尺度。正是在这种社会需求的背景下,天然复合调味料越来越多地走进了人们视野,进入人们的生活,并且在人们的饮食生活中占有的比重也越来越大。以满足人们的生活需求为目标,天然复合调味料产品的系列、种类不断丰富和增加,工业化、专业化的生产成为必然。据此本文论述了天然复合调味料的定义、人们调味的变化趋势、调味变化的内在原因、天然复合调味料的未来发展;并认为调味的变化有四种趋势:化学调味料转向天然调味料、氨基酸调味料转向多肽及提取物调味料、单一味型调味转向复合味型调味、家庭调味转向工业调味。更多还原
