果醋中金属元素的分析
Analysis of metallic elements in fruit vinegar
【摘要】 用原子吸收法测定了几种果醋的金属元素Fe,Cu,Ca,Pb的含量。回收率在93.1%~105.2%之间。实验数据显示,果醋的总灰分含量远远低于陈醋;果醋中的金属元素含量随水果种类不同而差异显著,其中沙棘醋中Fe(3.068 mg/dL)和Cu(0.963 mg/dL)含量最高,苹果醋中Ca含量最高(8.455 mg/dL)。实验表明,果醋含丰富金属元素,具有较高的营养保健功效。
【Abstract】 The contents of Fe,Cu,Ca and Pb in different fruit vinegars were determined in this paper.The recovery is between 93.1% and 105.2%.The results show that it’s tota1 ash content were much less than traditional vinegar.The contents of metallic elements were different from each other for their raw materials,and the contents of Fe(3.068 mg/dL)and Cu(0.963 mg/dL)were the highest for seabuckthorn vinegar,and Ca(8.455 mg/dL) for apple vinegar.
