肉类食品安全追溯系统中的模糊评价方法研究

【摘要】 质量安全追溯模型基础是通过分析肉类食品生产链中关键危害因素,获取隐含在其中的关联规则,建立食品生产过程的表现和潜在因素之间的关联关系,传统的定性描述危害因素的方法无法直接应用在追溯系统中。本文在肉类食品安全追溯系统中引入模糊FMECA方法,对肉类食品供应链中危害风险的严重度、频度和探测度进行模糊评估,从而得出量化指标并确定关键控制点,对满足追溯系统不同追溯宽度和精度的要求具有重要作用。

【Abstract】 As effective methods of quality security management, traceability system for meat food would attract the attention of consumers, domestic and foreign agencies. This paper determined the traceable fuzzy prior probability and distribution function based on the hazard risk severity, frequency and measured, actualized the tracking and early-warning of quality security combining to the expertise and knowledge, established direct and indirect traceable negative correlation set of the quality security according to the previous hazards results, recognized risk model and factors of minimal cut sets and minimal path sets for the quality security of meat food based FMECA, and achieved the traceability of quality security.
