涂石蜡大米的石蜡含量测定方法的研究

【摘要】 针对7种大米,分别涂液体石蜡0.2%。索氏抽提法从整粒或粉碎大米中抽提粗脂肪,采用测定皂化值(方法Ⅰ)和不皂化物含量法(方法Ⅱ)确定大米表面的石蜡量。结果显示,除黑米外,方法Ⅰ和方法Ⅱ的回收率分别是93.1%~120%(整粒)、95.5%~109%(粉碎)和70.4%~122%(整粒)、70.9%~99.5%(粉碎)。石蜡涂量在0.05%以上,方法Ⅰ是测定涂石蜡大米中石蜡含量的可靠方法。

【Abstract】 7 kinds of rice were coated with 0.2% paraffin liquid. The coarse fat of coated rice was extracted from the whole grain or the crushed rice with Soxhlet method.Its saponification value(for method Ⅰ) and unsaponifiable compound(for methodⅡ) were determined to confirm the liquid paraffin content on the surface of the rice grains.The recoveries obtained for method Ⅰare 93.1%~120%(using whole grain) and 95.5%~109%(using crushed rice);the recoveries for methodⅡ are 70.4%~122%(using whole grain) and 70.9%~99.5%(using crushed rice) except the black rice.The method is feasible for rice coated with paraffin more than 0.05%.
