【摘要】 [目的]了解广州市城区学校食堂的卫生状况,以便发现存在的问题,加强对学校食堂卫生管理,保障师生身体健康。[方法]2005年9~12月,在广州市城区随机抽取72所大、中、小学校的食堂进行调查。[结果]调查72间食堂,卫生许可证持证率为80.56%,75.00%的布局欠合理;能到相对固定并持有卫生许可证单位采购食品的占81.94%,38.89%无单独粗加工间,70.83%有动、植物食品原料混合洗放现象;调查423名食堂工作人员,个人卫生状况较好的占87.71%。[结论]广州市城区学校食堂存在食品卫生安全隐患。更多还原

【Abstract】 [Objective]To explore the sanitation state of the school’s mess halls in Guangzhou,to analysis the problem in the mess halls and to ensure teachers and students in good condition.[Methods]September to December in the year of 2005,According to the method of random sample,the 72 mess halls were sampled.[Results]In the 72 mess halls,there were 80.56% of them having health license,75.00% having not with reason in distribution,81.94% buying food for fixing and having sanitation license units,38.89% having not separateness working room for food original process,70.83% having mix wash and lay aside with animal food and vegetable,423 workers in mess hall were inspected,87.71% of them having good status in individual health condition.[Conclusion]There are food safety hidden tuouble in mess hall in Guangzhou.更多还原
