【摘要】 综述了卵磷脂的组成和性质,及在医药、化妆品、食品和饲料工业等方面的应用。

【Abstract】 As a major component of cell memberace,lecithin is generally thought to be an important nutrition factors.The composition,construction and characteristics of the lecithin were introduced.The application of lecithin in food and medical industry was explained in detail.
