脂溶性茶多酚的研制及其抗氧化性能研究
Preparation and antioxidative activity of lipid-soluble tea polyphenols
【摘要】 用响应面回归分析法对茶多酚化学改性的工艺条件优选 ,确定出茶多酚改性的最佳工艺条件为 :茶多酚∶硬脂酰氯∶催化剂为 1∶1.2 1∶0 .0 7(W/W/W)、反应温度 6 8.7℃、反应时间 8.5h ,在此条件下改性产物的抗氧化性能较强。
【Abstract】 The optimum synthetic conditions of lipid-soluble tea polyphenols were determined by the response surface test and regression design.The result was as following:the ratio of tea polyphenols to stearoyl chloride to catalysts 1∶1.21∶0.07(W/W/W), reacting at 68.7℃ for 8.5 h. Under these conditions, the antioxidant activity of the product is fine.
