顶空气相色谱法测定食品风味物质

【摘要】 顶空气相色谱分析法 (HSGC)是近年来测定食品风味物质常用的方法 ,采用气体进样 ,干扰少 ,谱图简单 ,本文就HSGC的理论基础、分类和在食品风味物质测定中的应用作一简单介绍。

【Abstract】 Headspace gas chromatography(HSGC) is the common method of measuring flavor bodies in food.For adopting gas injection,the disturbance of graph is less,and the graph is clarity.The thesis makes a simple introduces on the theory basis and the classify of HSGC,with the application of measuring flavor bodies in food by using HSGC.
