【Abstract】 The paper summarized the studies on bacterial luminescent genes and their applications in food science, especially dairy scientific research and food industries with specific emphasis on chemical mechanism, genetic basis and research progress of bacterial luminescence and methods of constructing luminescent Lactococcus and main factors affecting luminescence intensity of luminescent lactococcus. In addition, the principle and method of constructing lux-containing recombinant bacteri-ophages and applications in food science were discussed in this paper.更多还原
