变温处理对黄瓜果实生物膜保护系统的影响

【摘要】 研究了不同时间变温处理对黄瓜果实膜脂过氧化系统的影响。结果表明:变温处理可提高清除自由基酶类物质(如SOD、CAT、POD等)的活性,使膜脂过氧化程度减轻,膜透性减少,从而延缓黄瓜果实冷害的产生;变温处理在冷藏条件下4 d左右进行为宜。

【Abstract】 Cucumber fruit(Cucumis sativus L.cv.Ludi II)were treated at intermittent warm room temperatures(20±2 0 C)for24h after2,4and6days of storage at3±1 0 C respectively,with those fruit stored at the room tem pera ture and cold storage temperature(3±1 0 C)as controls.Effect of intermittent warming on membrane-lipid peroxidation system of cucumber fruit was studied.The results indicated that the intermittent warming treatment in creased the activities of free radical scavenging enzymes(such as SOD,POD,CAT),which maintained the integrity of cell membrane structure,reduced membrane permeability and hence retarded the chilling injury.The intermit tent warming treatment is recommended after about 4days of cold storage.
